Grandma’s Cheese Rolls
6 eggs – Boiled and cut up
2 lbs. Cheddar Cheese
8 oz. tomato sauce
1 small can chopped black olives
1 jar pimento
Garlic
Combine ingredients. Slice top off of french rolls lenthwise. Scoop out centers. Fill with cheese mixture. Cover rolls with bread cut off. Wrap in foil and bake at 400 degrees for 20 minutes.
Mmmmm. Very delicious. This recipe has been in the family for probably 60 years.
Warm You Up Apple Pie Cider (For Adults Only!)
1 Gallon of Apple Cider
2 Quarts of Apple Juice
8 Cinnamon Sticks
3 Cups of Sugar
750ml Everclear Alcohol
Combine Apple Cider, Apple Juice and Cinnamon Sticks and soft boil for 10 minutes.
Add 3 cups of sugar and soft boil for 10 minutes to dissolve sugar, stirring occasionally.
Remove from heat and let cool to at least 110 degrees.
Remove cinnamon stick and add Everclear.
You don’t want to add the alcohol when the mixture is too hot as all alcohol will evaporate.
Best served ice cold to sip.

Pumpkin Scones
(adapted from Food.com recipe)
Ingredients for Scones:
o 2 cups all-purpose flour
o 7 tablespoons sugar
o 1 tablespoon baking powder
o 1/2 teaspoon salt
o 1/2 teaspoon ground cinnamon
o 1/2 teaspoon ground nutmeg
o 1/4 teaspoon ground cloves
o 1/4 teaspoon ground ginger
o 6 tablespoons cold butter
o 1/2 cup canned pumpkin ore fresh pureed
o 3 tablespoons half-and-half
o 1 large egg
Main Sugar Glaze
o 1 cup powdered sugar
o 1 tablespoon powdered sugar
o 2 tablespoons whole milk
Spiced Glaze
o 1 cup powdered sugar
o 3 tablespoons powdered sugar
o 2 tablespoons whole milk
o 1/2 teaspoon ground cinnamon
o 1/8 teaspoon ground nutmeg
o 1/4 teaspoon ginger
o 1/4 teaspoon ground cloves
Directions
TO MAKE THE SCONES:
1. Preheat oven to 425 degrees F. Lightly oil a baking sheet or line with parchment paper. Combine flour, sugar, baking powder, salt, and spices in a large bowl. Using a pastry knife, fork, or food processor, cut butter into the dry ingredients until mixture is crumbly and no chunks of butter are obvious. Set aside.
2. In a separate bowl, whisk together pumpkin, half and half, and egg. Fold wet ingredients into dry ingredients. Form the dough into a ball.
3. Pat out dough onto a lightly floured surface and form it into a 1-inch thick rectangle (about 9 inches long and 3 inches wide). Use a large knife or a pizza cutter to slice the dough twice through the width, making three equal portions. Cut those three slices diagonally so that you have 6 triangular slices of dough. Place on prepared baking sheet.
4. Bake for 14–16 minutes. Scones should begin to turn light brown. Place on wire rack to cool.
TO MAKE THE MAIN GLAZE:.
1. Mix the powdered sugar and 2 tbsp milk together until smooth.
2. When scones are cool, use a brush to paint plain glaze over the top of each scone.
AS THAT WHITE GLAZE FIRMS UP, MAKE THE SPICED GLAZE:
1. Combine the ingredient for the spiced icing together. Drizzle this thicker icing over each scone and allow the icing to dry before serving (at least 1 hour). A squirt bottle works great for this, or you can drizzle with a whisk.
Not your Grandma’s CARAMEL PIE
2 cans of Eagle Brand Milk (sweet condensed milk)
1 graham cracker pie crust
tub of cool whip (or you could make your own whipped topping if you like doing that sorta thing)
1 package of mini chocolate chips (it wont use alot of it but it’s good for later…you know, when you just NEED CHOCOLATE & anything will do)
HOW TO:
Place cans of milk (unopened) in large pot of boiling water. Water should only be boiling gently (and you will have to add already boiling water to the pot as some will evaporate). Boil in pot for 3 hours turning over every 30 minutes (hey, i didn’t say this was no work). Remove cans of milk and CAREFULLY open (THEY WILL BE HOTTTTTT). Pour into a bowl and stir..mix…whatever..till it looks gooey..not gloopy…then pour into pie shell and cool for at least 4 hours. Top with whip cream and sprinkle mini chololate chips on top and serve.
For a Turtle Pie – place chocolate chips in the bottom of the shell before you pour in the milk. For snickers pie, add peanuts and chocolate at bottom of pie shell, add one can of milk (caramel), another layer of chocolate and peanuts then other can of milk.
You can put anything you like in the pie shell – broken heath bars, chocolate chips, toffee chips….
SO GOOD IT WILL MAKE YOUR TONGUE REACH OUT & SMACK YOUR FACE!!!
Honeyed Pumpkin Pie
Be sure to flute pie-shell edges high to hold the generous filling
Unbaked 9″ pie shell
1 (1 lb.) can pumpkin (2 c.)
1/2 tsp ginger
1/2 tsp cinnamon
1 tsp salt
4 eggs, slightly beaten
1 cup honey
1/2 cup milk
1/2 cup heavy cream
* Preheat oven to 400 degrees
* In large bowl blend together pumpkin, ginger, cinnamon and salt. Beat in eggs, honey, milk and cream. Pour into pie shell.
* Bake until knife inserted 1″ from edge of pie comes out clean, about 50 – 55 minutes. (The filling will set as pie cools.)
Chocolate Mayonnaise Cake (Yes, really!)
This cake is so moist and rich you won’t believe how simple it is to make.
1 c mayonnaise
1 c sugar
1 c hot water
1 tsp baking soda
2 c flour
1 tsp cinnamon
3 Tbsp unsweetened cocoa
1 c chopped walnuts (optional)
Preheat oven to 375 degrees. Grease 11×7 pan. Cream mayonnaise and sugar in large bowl. Add hot water and baking soda to creamed mixture. Sift together flour, cinnamon and cocoa. Add into wet ingredients. Mix in walnuts. Pour mixture into greased 11×7 inch pan. Bake 30 minutes or until toothpick comes out clean.
Banana Split Cake
Ingredients:
4 sticks of butter
2 eggs
5-6 bananas
1 large container Cool Whip
3 packages of graham crackers
2 cups powdered sugar
1 large can crushed pineapple
Maraschino cherries & nuts if desired
Crust:
2 sticks of butter
3 packages of graham crackers
Crush graham crackers (as much as possible); melt butter; mix and press into 13×9 cake pan.
Filling:
2 eggs
2 cups powdered sugar (1 box)
2 sticks softened butter (not melted)
Mix and beat for 15 minutes. Pour evenly over crust.
Slice bananas lengthwise and place on top of filling. Drain pineapple and put on top of bananas. Spread Cool Whip on top of pineapple. Refrigerate overnight. When serving, top with maraschino cherries and chopped nuts if desired. This is a very rich and tasty dessert that is the way to go if you’re going to cheat!
Raw Apple Cake by Jo Shaw
Preheat oven to 350
Grease Very Well and flour buntz pan
Mix (don’t beat this to death!) together until well blended in kitchen aid (works the best for me):
1 1/4 c. canola oil, 2 c. sugar, 1 Tbsp. “good” vanilla and 3 large eggs
Add:
3 c. flour, 1 tsp. soda, 1 tsp salt, 1+ Tbsp “good” vietnamese cinnamon, 1 tsp ground nutmeg, 1/2 tsp. ground clove
Mix until just moist and see NO flour
Mix in until just moist and batter covers the apple:
3 coarsely chopped and skinned large granny smith apples and 11/2 cup coarsely chopped walnuts or pecans
Cake batter will be very thick and gooey
Pour into prepared buntz pan
Bake for 1 hour and 25 minutes
Use knife for testing, if it comes out clean remove from oven
Flip the cake over onto a plate and let the gravity pull down the cake onto the plate. Don’t hurry the process! Once cake is “out” sprinkle with powdered sugar and serve on your time! I’ve served it warm and cold and makes no difference to the men or women in my life. Our employees totally love this cake and I can get them to feel good about themselves after a piece of this cake!
Little Applesauce Muffins
1/2 c butter
1/2 c sugar
2 eggs
3/4 c applesauce
1-3/4 c flour
1 tbsp baking powder
1/2 tsp salt
1/4 c butter, melted
2/3 c cinnamon sugar
Cream butter & sugar until fluffy. Beat in eggs. Beat in applesauce. Add baking powder, salt & flour. Stir just to moisten. Spoon into 36 greased muffin cups (1-3/4″ diameter). Bake at 425 degrees for 15 minutes or golden brown. While warm, dip into melted butter, roll in cinnamon sugar.
Mmmmm. Better than donuts!
Oreo Truffles
1 package cream cheese 8 oz.
1 package oreo cookies
6 oz. milk cholcolate chips (for melting/dipping or drizzle)
Pulse 10 oreo cookies in food processor till it makes a fine crumb place in large bowl. Continue till the whole package is proccessed.
Combine the cream cheese into the cookie crumbs, dough is stiff, may need to combine with hands, Dough will turn dark brown.
Roll into 1 inch balls and place on cookie sheet lined with parchment paper.
If dough becomes too soft, place in fridge for 5 minutes or so.
When all dough is used, melt chocolate chips…..
Now here is were you can be creative….you can dip the balls in the melted chocolate, Dip part of it or make a design by drizzling the melted chocolate over the balls. You can even melt some white chocolate and drizzle too!
These are very rich, but well worth it! Enjoy!
